The blend of this white wine highlights its aromatic structure but also brings forth a grilled and elegant woodiness that one senses from the first nose. On the mouth, there are beautiful accents of citrus and white fruits, backed by a touch of freshness and acidity. Even the finish, which is fatty and jovial, reinforces the elegance and harmony of this cuvee, which is very representative of the appellation. It does wonders at the table with poached oysters or cheeses sprinkled with parsley.

Appelation : AOP La Clape
Cépages : Bourboulenc 40%, Picpoul 25%, Roussanne 20%, Vermentino 15%,
Culture : Sustainable agriculture since 2004 for the environment and complexity of wine.
Sol : Limestone, gravelly land.
Vinification : Mechanical harvest, debt and cooling of the must. Low temperature fermentation.
Elevage : 3 months in barrels.
Conservation : Between 2 and 5 years old depending on the vintage.
Dégustation : A limpid, floral nose with white fruits and an icy brown touch. Cooked fish, white meats in sauce, blue cheese, spicy dishes.
